The grapes went to the tank whole cluster after being gently foot tread by my children in the bins. Following a 5 day cold soak to extract as much color as possible, the fermentation was completed in 8 days. The wine completed Malolactic Fermentation naturally in a neutral 400 liter French oak puncheon. It was in puncheon for 14 months and racked once. Blended with 5% of our Las Madres Syrah.
